Shrimp Pasta Primavera: A Simple and Delicious Recipe

Vibrant Shrimp Pasta Primavera!
Tender shrimp, fresh veggies, and perfectly cooked pasta in a light, flavorful sauce—a colorful feast for the senses!


Ingredients

8 oz linguine
1 tablespoon olive oil
1 lb shrimp, peeled and deveined
1 cup cherry tomatoes, halved
1 cup zucchini, diced
1 cup yellow squash, diced
1 cup red bell pepper, diced
1 cup asparagus, cut into 1-inch pieces
3 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and pepper to taste

Instructions

Cook linguine according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add shrimp and cook for 2-3 minutes, or until pink and opaque. Remove shrimp from skillet and set aside.
In the same skillet, add cherry tomatoes, zucchini, yellow squash, red bell pepper, and asparagus. Cook for 4-5 minutes, or until vegetables are tender-crisp.
Add garlic and red pepper flakes to the skillet. Cook for 1-2 minutes, or until fragrant.
Return shrimp to the skillet and toss to combine with the vegetables. Add cooked linguine and toss to combine.
Sprinkle with grated Parmesan cheese and fresh basil. Season with salt and pepper to taste. Serve immediately.
