Ingredients
1 sheet refrigerated pie crust
2 tablespoons all-purpose flour
2 tablespoons granulated sugar
2 cups mixed fresh fruit (such as berries, peaches, and plums)
1 tablespoon lemon juice
1 tablespoon apricot preserves, melted
Powdered sugar for dusting (optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Roll out pie crust into a 10-inch circle on a lightly floured surface. Transfer to prepared baking sheet.
In a small bowl, mix together flour and granulated sugar. Sprinkle mixture over pie crust, leaving a 2-inch border.
Toss mixed fruit with lemon juice. Arrange fruit over flour mixture on pie crust, leaving the border uncovered.
Fold edges of pie crust over fruit, pleating as needed.
Bake for 20-25 minutes, or until crust is golden brown and fruit is tender.
Remove from oven and brush melted apricot preserves over fruit.
Let cool slightly before serving. If desired, dust with powdered sugar before serving.
