Ingredients
For the Muffins:
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 cup sugar
1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin puree
1/4 cup milk
1 teaspoon vanilla extract
For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
Combine Wet Ingredients: In a large bowl, beat sugar and oil until well combined. Add eggs one at a time, then mix in the pumpkin puree, milk, and vanilla extract.
Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Make Streusel: In a small bowl, mix flour, brown sugar, and cinnamon for the streusel. Cut in the cold butter until the mixture resembles coarse crumbs.
Fill Muffin Cups: Fill each muffin cup about 2/3 full with the batter. Sprinkle the streusel topping evenly over each muffin.
