Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup sour cream, room temperature
  • 1/2 cups mashed bananas (about 3 large bananas)
  • 2 teaspoons vanilla extract
  • 1/2 cup buttermilk, room temperature

Cream Cheese Frosting:

  • 8 oz cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract Pinch of salt

Instructions

Preheat your oven to 350°F (177°C).

Grease a 9×13 inch baking pan.

Whisk the flour, baking soda, and salt together in a large bowl.

Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Add the granulated and brown sugars and beat on high speed until creamed, about 2 minutes. Add the eggs and vanilla extract. Beat on medium-high speed until combined, then beat in the sour cream and mashed bananas until combined. With the mixer on low speed, add the dry ingredients just until combined. With the mixer still running on low, add the buttermilk until combined. Do not overmix.

Spread the batter into the prepared pan. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Remove the cake from the oven and set on a wire rack. Allow to cool completely in the pan.

Slice and serve. Cover leftovers tightly and store in the refrigerator for up to 5 days.
